Recipe : Crock Pot Oatmeal

So, you want oatmeal for breakfast but you're not in the mood for cooking in the morning?  Taken care of!  Assemble this in the evening, and it's hot and waiting for you when you get up!  Works best in a small crock; if you only have a big one, I might try doubling the recipe to keep it from drying out on the bottom.


Crock Pot Oatmeal

1 cup steel-cut oats
4 cups water

cook on low overnight, 8-10 hours

You can modify the recipe in any number of ways. To beef it up a bit, add a generous sprinkle of cinnamon and a handful of raisins, a small handful each of wheat and rye kernels, and a couple of tablespoons of ground flaxseed. Serve sprinkled with sugar or splenda to taste, yummy with some vanilla soy milk, too :)   Swap half of the water for unsweetened apple juice for another flavor change.
