Recipe : Dutch Baby
A heartier, higher-protein alternative to pancakes - and easier, too! This recipe comes from The $5 Dinner Mom Breakfast and Lunch Cookbook, page 57. Bake in the oven while you're frying up some sausage and/or preparing fruit to serve alongside for a great breakfast.
Dutch Baby
6 large eggs
2 cups milk
2 cups all-purpose flour
1/4 cup sugar
1 tsp vanilla extract
1/2 tsp ground cinnamon
1 tsp salt
1/2 cup butter, melted
Preheat the oven to 400 degrees. Lightly coat a 9x13-inch glass baking dish with nonstick cooking spray.
In a mixing bowl, whisk together the eggs until frothy, and then add the milk, flour, sugar, vanilla, cinnamon and salt. Whisk until the batter becomes smooth. Pour the melted butter in to the prepared baking dish and then pour the batter over it.
Bake the pancake in the preheated oven for about 25 minutes, until it puffs up and turns golden. Let cool a few minutes before serving.
