We have accumulated a lot of Rice Krispie recipes over the years, besides the Original Rice Krispies Squares Recipe and my favorite extra soft and deliciously gooey version. I thought I'd just go ahead and put them all here in one place, along with a few more that I found online and thought might be fun to try. Enjoy!
Buckeye Cookies (vintage recipe)
- 1/4 lb. soft butter
- 2 cups crunchy peanut butter
- 4 cups sifted icing sugar
- 3 cups Rice Krispies cereal
- 1 package semisweet chocolate chips
- 1/3 bar of paraffin
Mix all together and form into balls. Melt chocolate chips and paraffin over hot water. Dip balls into this and put on wax paper. Keep refrigerated or store in freezer.
Peanut Butter Balls / Buckeye Cookies
- 1 1/2 cups creamy peanut butter
- 1/2 cup unsalted butter (softened)
- 1 tsp vanilla extract
- 1/4 tsp salt
- 2 1/2 cups powdered sugar (sifted)
- 2 cups crisp rice cereal
- 3 cups chocolate chips
- 1/2 tbsp coconut oil (optional)
Mix peanut butter and butter in a large bowl until smooth. Add vanilla and salt. Gradually mix in the powdered sugar, adding a little extra if needed, until it reaches a dough like consistency. Fold in the rice cereal until evenly mixed.
Cover the bowl and place it in the fridge to chill for 30 minutes. Shape into balls, about 1 tbsp each. Place onto a cookie sheet lined with parchment paper. Refrigerate for at least 30 minutes.
Melt chocolate chips in a small bowl with optional coconut oil, stirring well and frequently.
Remove peanut butter balls from the fridge and coat them one at a time with melted chocolate, then place on parchment or waxed paper. Let the balls sit until the chocolate is set.
Store in the fridge for up to 2 weeks, or freeze.

If your kids have spotted Lucky Charms bars at the store, you can save some money by making those at home, too. We won't try to kid anyone by saying these will be any healthier, though.
* Are you hosting friends and looking for a homemade treat that is gluten-free? Malt and barley are not celiac-safe, but you can make gluten-free squares if you're careful about your ingredients and be mindful of potential cross-contamination in your butter/margarine.
Yuletide Cherry Cookies
Makes about 2-1/2 dozen

- 1/2 cup butter, softened
- 1 package (3 ounces) cream cheese, softened
- 1/2 cup sugar
- 1/4 teaspoon vanilla or almond extract
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/8 teaspoon salt
- 3/4 cup crushed crisp rice cereal
- 15 red and/or green maraschino cherries, halved and patted dry
In a large mixing bowl, cream the butter, cream cheese and sugar. Beat in almond extract. Combine the flour, baking powder and salt; gradually add to the creamed mixture. Cover and refrigerate for 1 hour or until easy to handle.
Shape dough into 1-in. balls; roll in crushed cereal. Place 2 in. apart on ungreased baking sheets. Bake at 350° for 12-15 minutes or until lightly browned.
