Recipe : Hot Frosted Gingerbread

Another of Grampy's recipes from days gone by...


Hot Frosted Gingerbread


1/2 cup shortening
1/2 cup strong hot coffee
2 eggs
1/2 cup sugar
1/2 cup molasses
1 1/2 cups flour
2 tsp baking powder
1 tsp ginger

Melt shortening in hot coffee.  Beat eggs and stir in sugar and molasses.  Add shortening & coffee.  Add dry ingredients and mix well.  Bake at 350 degrees for 30-40 minutes until done.

Icing:
1 cup icing sugar
4 tbsp cream
1/2 tsp vanilla

Blend all together.  Spread over hot cake and serve.
