Recipe : Cabbage Soup

Yes, this is the soup recipe of long-standing diet fame.  There are a whole lot of reasons why you should avoid the cabbage soup diet, though, so that is not why I am sharing the recipe.   What I have found about this recipe is that it makes a great base for a vegetable soup.  Make it a heartier meal by adding additional veggies (turnip, cauliflower, corn or peas are all good choices), grains (barley, brown rice), beans, lentils or chopped cooked chicken.

Cabbage Soup


6 carrots, peeled and chopped
6 large scallions, chopped
1 28-oz can tomatoes (whole or diced)
1 head cabbage, chopped
2 green peppers, chopped
1 bunch celery, diced

Combine in a large put and add enough water to cover.  Season with one package of onion soup mix.  Boil for ten minutes.  Reduce heat and simmer until vegetables are soft.  Add more water if necessary.
